The origin — roughly
The story we have goes something like this. Some of it is well-established. Some of it is the current best model. We could be wrong about parts of it. But here's where we are.
As far as physicists can tell, the carbon in this tortilla — in these beans, in the mushrooms, in you — was almost certainly inside a star before it was here. Dying red-giant stars run out of hydrogen and start burning helium. Two helium nuclei fuse into beryllium, which normally collapses in less than a trillionth of a second — but under enough pressure, a third helium arrives in time. The three become carbon-12. When those stars died, supernovae scattered the elements across the galaxy. Gravity gathered them into planets. That's the model that fits the evidence we have. It's a good model.
What happened next is harder to pin down. Somehow, early microbes appeared in the oceans — we're still genuinely uncertain about how. Some of them eventually learned to pull nitrogen from the air and build it into amino acids, the molecules that make up protein. Everything alive runs on some version of that chemistry. The nitrogen in the beans you're holding was probably fixed by bacteria living in the roots of a legume plant somewhere in the Americas, at some point in the last several thousand years, before it found its way here. That part is fairly well understood.
One thing we know with more confidence, because it's historical record: the ingredients in this burrito couldn't have shared a kitchen before 1492. The avocado, beans, chiles, tomatillos come from the Americas. The wheat, cilantro, lime from the Old World. The shiitake from East Asia. They didn't know about each other. The collision of two hemispheres — the Columbian Exchange — is what made the burrito's ingredient list possible. That's documented history, not theory.

There is also something worth saying about the geography. The avocado is from Mesoamerica. The beans are American. The chiles are Mexican. The wheat in the tortilla is from the Near East. The cilantro is from the Mediterranean. The lime is from Southeast Asia. The shiitake was first cultivated in Song dynasty China. Before 1492, these things had never been in the same room. The burrito is only possible because two hemispheres of human history collided. Every ingredient carries that crossing with it.
The sunrizo uses two kinds of mushrooms — shiitake and crimini. Worth knowing: as far as current genetics can tell, we're more closely related to fungi than to plants. Humans and fungi appear to share a common ancestor from roughly a billion years ago. Both digest food externally with enzymes rather than doing photosynthesis. Whether that means anything to you while you eat is your call. But the mushroom in this burrito is less foreign to your basic chemistry than it might seem.

Sunflower press-cake

Seeds pressed for oil leave behind the press-cake — defatted solids, concentrated in protein and fiber. Nothing wasted. Combined with fava and pea to form the sunrizo core. Mirasol means "looks at the sun" — sunflower. The burrito is named for this ingredient.
Guajillo (dried mirasol)
Mexico · Trans-Mexican Volcanic Belt
The fresh chile is called mirasol — grows upright, facing the sun. Dried, it becomes guajillo. Flavor: dried cherry, berry, mild tannin. Heat: 2,500–5,000 SHU. Not smoked — just dried, which concentrates depth without smoke.
Ancho (dried poblano)
Mexico · thousands of years
The poblano ripens red and dries into the ancho. Flavor: raisin, prune, cocoa, gentle smoke. 1,000–2,000 SHU. Both chiles cooked into the sauce that coats the mushrooms and press-cake.
Fava bean + Pea

Nitrogen-fixing legumes — roots harbor Rhizobium bacteria that pull N₂ from air into the amino acids that make protein. Among humanity's oldest cultivated foods.
Black beans

Lysine-rich — completes the amino acid profile with the wheat tortilla. Pressure-cooked: reduces phytates ~50%, dramatically improving mineral absorption. The bean water carries flavour compounds into the sunrizo sauce.
Shiitake mushroom
East Asia · cultivated since Song dynasty ~960–1279 CE
β-glucans (immune modulation). Ergothioneine — heat-stable antioxidant that accumulates in mitochondria. Cannot be synthesised by humans; must come from diet. Associated with reduced cognitive decline.
Tofu

Soy milk curdled and pressed. Isoflavones (genistein, daidzein) with documented cardiovascular benefits. Biological craft unchanged for two millennia.
White rice

Cooked the day before, chilled, reheated at market — this forms resistant starch, which reaches the colon undigested, feeds microbiome bacteria, and produces butyrate fuelling the colon wall.
Tomatillo

High pectin gives salsa its body. The genus lineage predates most modern landmasses as we recognise them. The species we eat is a recent branch on a very old tree.
Avocado

Likely once dispersed by Pleistocene megafauna now extinct. Dominant fat: oleic acid (MUFA). Fat-soluble carotenoid absorption from all other ingredients increases 3–5× when consumed with avocado in the same meal.
Lime

Citric acid chelates iron — non-heme iron absorption boost of 2–3× when lime is in the same meal as beans. The pico + lime + beans combination is specifically well-designed for iron.
Cilantro
Mediterranean / West Asia · among the oldest recorded herbs
Linalool — same compound as lavender — activates GABA-A receptors with mild anxiolytic effect. Taste perception is gene-dependent: OR6A2 variant reads the aldehydes as citrus; without it, some detect soap. Not preference — genetics.
Wheat tortilla · Tipo 45

What we think happens inside you
0–30 min
The chiles trigger capsaicin receptors — this seems to cause a small endorphin release in most people, though individual response varies. Digestion starts. Meals with this much fiber and fat tend to empty slowly, which is generally why people feel full for a few hours. How long depends on the person.
30–90 min
Proteins start breaking down into amino acids. Satiety signals from the gut reach the brain — current research suggests this takes around 20 minutes, which is part of why eating slowly tends to work. Fats slow the whole process. The liver releases emulsifiers that make fat-soluble nutrients from the peppers and tomatoes available for absorption. This is roughly where the avocado becomes relevant.
90–180 min
Somewhere in here, most absorption happens. Glucose from the rice enters the blood — more slowly than it would from rice alone, because the bean fiber, fat, and a small amount of cinnamon in the sauce all slow transit. How much difference this makes varies a lot between people, but the mechanisms are real and reasonably well studied.
2–4 hours
Fat-soluble carotenoids — orange from the peppers, deep red from the tomatoes — need dietary fat to be absorbed. Without it, most would pass through unused. The avocado oil is why they're available. Ergothioneine from both mushrooms appears to cross into cells and accumulate in the mitochondria for weeks. The research on this is relatively recent and still developing, but it looks meaningful.
4–8 hours
The fiber that made it through mostly intact is now being fermented by the microorganisms living deep in the gut. They produce short-chain fatty acids as a byproduct — butyrate is one of the main fuels for the gut lining itself. Gut microbiome research is still young, and individual variation is significant. But the fiber goes somewhere useful, and the garlic appears to feed specific bacterial populations. Your microbiome is having its own meal.
After
The amino acids get broken down and reassigned — into proteins, enzymes, neurotransmitters, cell membranes. The atoms aren't in the burrito anymore. Where exactly they go, and for how long, and what "you" even is in a precise sense — that gets into territory that's genuinely uncertain. As far as we can tell: steady energy, no crash, and the meal did what it was supposed to do.
These are the best stories we have about what this is.
